This paleo sweet potato hash recipe is easy to make! This is one of my favorite breakfast recipes and also doubles as a tasty breakfast burrito filling! It also makes a great meal prep recipe that warms up beautifully for a healthy meal the next day or a make ahead breakfast during the week.
Did you know it can be difficult to find a healthy savory breakfast without using fried egg or eggs for that matter! However this yummy sweet potato breakfast hash has me coming back to make it again and again with so much flavor from the chimichurri sauce, crispy sweet potatoes, and crunch of the bacon.

How to Make Crispy Sweet Potato
Sweet potatoes usually don’t get as crispy as white potatoes since they have a tendency to burn on the outside before cooking fully on the inside. Here are a few tricks that can help you get crispy golden brown sweet potatoes in your sweet potato hash:
- USE A LARGE PAN. The larger the pan, more likely the potatoes are to crisp rather than steam. Ideally, you want to use at least a 12″ cast iron skillet for this recipe.
- DON’T STIR TOO MUCH. Just like when you make hash browns, you really don’t want to stir too often. This will allow the potatoes to sear and brown a bit before being shuffled around. Every 1 1/2-2 minutes seemed to work well for me.
- CONSIDER ROASTING INSTEAD. Roasting your sweet potato hash in an air fryer for 10 minutes at 400 degrees will crisp them up without any fuss from you! Or in the oven on a sheet pan for double the time then an air fryer.
Use This For Meal Prep
Sweet potato hash is a Fabulous healthy meal prep breakfast since it reheats nicely. Put it in meal prep containers with small chimichurri sauce or reheat a portion each morning. (I most often reheat in the microwave, but if you want to restore some of the crispness, you can toss it in a pan on the stove or a air fryer for a few minutes.)
Ways To Adapt This Sweet Potato Hash
Change up the meat
You can use another type of meat like, a breakfast sausage, ground pork or diced ham. I like ground turkey the best, because it is easy to find in all grocery stores, and is a versatile meat. You can even use leftover chicken! Just toast it for a bit in the skillet at the beginning.
Make it meatless
If you’d rather have a meatless hash, go for it! I’d recommend adding some seasoning to the potatoes to boost the flavor with more fresh herbs, or you can add more vegetables
I wanted to make this hash easy and not too labor intensive, but you can definitely add some diced red bell peppers, zucchini, sliced Brussels sprouts, or any other kind of quick cooking vegetable. If you loathe chopping onions, use some dried minced onion or some onion powder (but it won’t taste the same :). Same goes for garlic powder.
Use white potatoes
If you’re a purist, use white potatoes. You may need a little extra oil in the pan and a little more time to get them cooked all the way through and browned well. Use some healthy fats that are a heat-safe oil that can handle high heat cooking like avocado oil or coconut oil.
Add an egg
If you like a fried egg, sunny side up egg or a runny egg, make some eggs in a separate pan or create a few little pockets in your hash and crack eggs into them. Cover and continue cooking until the eggs are done as much as you like. If your pan is oven-safe, pop the entire skillet in the oven to finish off the eggs.
What Sets This Recipe Apart
With repairing my gut I am currently on Autoimmune protocol diet and the list of what I can’t have at this time is long. It also feels like I have the same foods but this sweet potato hash is a great way to change up the monotony of your meals and a yummy hash that you will want to add to your paleo recipes folder. But what sets this recipe apart is the Chimichurri sauce. In my fall garden I have plenty of arugula and my favorite way to use it is making batches of this sauce and freezing small portions for later. Loaded Sweet potato hash Recipe (Paleo, AIP, Whole30)
Ingredients
- 3 tbsp avocado oil
- 1 small onion, diced
- 2 large sweet potatoes, diced
- 1 tsp seal salt
- 1 tsp of garlic powder
- 1/4 tsp black pepper
- 2 Tbsp fresh cilantro, chopped
- 1 lb ground turkey, ground pork or ground pork sausage (For AIP, ground pork or turkey and see below for AIP sausage seasoning)
- 8 oz mushrooms, sliced
- 4 strips of bacon
- Chimichurri to serve
- AIP turkey/pork seasoning
- 1/2 tsp sea salt
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- 1/2 tsp dried thyme
Instructions
- Using a large skillet, heat the avocado oil over medium heat. Add the sweet potatoes and lightly season with salt pepper and garlic powder. Cook for 8-10 minutes or until the sweet potato is crisped to you liking. Top with cilantro and set a side.
- Using the same pan add the bacon and cook on medium heat for 3-5 minutes Then remove the bacon and place on a paper towels to absorb the extra grease. With the bacon fat grease in the pan cook the onion for for another 3-5 minutes.
- Add the ground turkey and, AIP seasonings if using, cook until almost browned. Then add the mushrooms to the same pan and lightly salt.
- Crumble bacon into pieces and add sweet potatoes and bacon to the meat pan and stir. Serve with chimichurri on the side. Enjoy!
